FSN 505 - Food Safety and Quality Assurance


This course will provide an overview of the policies and processes to ensure food safety such as Good Manufacturing Practices (GMP), Hazard Analysis and Critical Controls Points Plans as well as risk-based Hazard Analysis and Preventive Controls for Human Foods, and basic requirements for FSMA. Quality assurance tools such as Quality Management Systems, sampling methods, and root cause analysis will discussed as well as fundamentals of food safety audits. Letter grade. (Offered every year.) 3 credits
